MAKES 12-18 SERVINGS | PREP TIME: 5 MINUTES | COOK TIME: 15 MINUTES
- 1 cup of vegetable oil
- 1 1/2 cups of buttermilk
- 2 cups of sugar
- 2 eggs
- 1 tablespoon of vanilla
- 1/2 teaspoon of salt
- 1 teaspoon of baking soda
- 2 cups of all-purpose flour
- 1 teaspoon of cinnamon
- 3/4 cups of shredded carrot
- 1 8-oz package of cream cheese
- 1 cup of sugar
- 3/4 cup of heavy cream
- 1 1/2 teaspoons of vanilla
Preheat oven to 350 degrees
In a large bowl, mix together the vegetable oil, buttermilk, and sugar until smooth. Then, add in the eggs and vanilla and mix.
Lastly, mix in the salt, baking soda, flour, cinnamon, and shredded carrots.
Pour the mix into prepared canoe boat molds and bake for 12-15 minutes until set.
Meanwhile, for the filling, whip together the cream cheese and sugar until the sugar is dissolved. Then, pour in the heavy cream and vanilla and whip until light and fluffy.
To serve, fill each Twinkie with a bit of the filling and enjoy.
